  • Place the bacon slices on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 12-15 minutes, or until crispy and golden brown.
  • Remove from the oven and place on a plate lined with paper towels to drain excess fat.

Make the Caesar Dressing:

  • In a medium bowl, combine the finely chopped anchovy fillets, lemon juice, Dijon mustard, Worcestershire sauce, and grated garlic.
  • Add the mayonnaise and whisk until smooth and well combined.
  • Season with salt and freshly ground black pepper to taste.
  • Set aside.

Assemble the Sandwich:

  • Toast the slices of bread until they are golden brown and slightly crispy.
  • Spread a generous amount of the Caesar dressing on one side of each slice of bread.
  • Place two large lettuce leaves on the dressed side of two slices of bread.

  • 400g (14 oz) thickly sliced roasted chicken breast
  • 200g (7 oz) thick back bacon
  • 4 large lettuce leaves, washed and dried
  • 4 slices of thick-cut whole grain or sourdough bread

For the Caesar Salad Dressing:

  • 4 anchovy fillets, finely chopped
  • 2 tablespoons freshly squeezed lemon juice (about half a lemon)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, grated
  • 120ml (1/2 cup) mayonnaise
  • Salt and freshly ground black pepper, to taste
