Instructions

Heat a skillet over medium-high heat. Add a drizzle of olive oil.
Season the chicken breasts with salt and pepper on both sides. Add them to the skillet and cook for about 5-6 minutes per side, until they are cooked through and golden brown.
Squeeze the juice of 1 lemon over the chicken 2 minutes before finishing cooking.
Remove the chicken breasts from the skillet and let them rest for 5 minutes.
While the chicken is resting, whip the feta cheese with the chopped basil in a small bowl until smooth and creamy. You can use a little extra virgin olive oil to help get a smooth texture.
You can either choose to slice or mash your avocado. Either way sprinkle over a pinch of salt and a drizzle of extra virgin olive oil.
Once your chicken has rested 5 minutes, toss it in a bowl with 1-2Tbsp of jalapeño mayonnaise.
To assemble the sandwich, spread the whipped feta cheese on the bottom half of the roll.
Add the sliced chorizo on top of the feta.
Then add the chicken on top of the chorizo.
Finally add the avocado on top of the chicken. If you’ve mashed it you can spread it to the bottom side of the bread.
