  • Mix the cooked macaroni into the cheese sauce. If the sauce thickens too much, add a splash of milk to adjust to your desired consistency. Set aside.

3. Prepare the chicken parm:

  • Butterfly the chicken breast and pound it flat to an even thickness.
  • Coat the chicken in seasoned flour, then dip it in beaten egg, and finally press it into the Parmesan and breadcrumb mixture until well-coated.

  • 30 g (2 tbsp) unsalted butter
  • 30 g (2 tbsp) plain flour
  • 250 ml (1 cup) whole milk (plus extra as needed)
  • 1 tsp garlic powder
  • 1 tsp truffle pesto (optional)
  • 50 g (1/2 cup) cheddar cheese, grated
  • 50 g (1/2 cup) red Leicester cheese, grated
  • Salt and black pepper, to taste

For the chicken parm:

  • 1 large chicken breast, butterflied and flattened
  • 50 g (1/3 cup) plain flour, seasoned with:

    • 1 tsp salt
    • 1 tsp black pepper
    • 1 tsp garlic powder

  • 1 large egg, beaten
  • 50 g (1/3 cup) grated Parmesan cheese
  • 50 g (1/3 cup) breadcrumbs
  • Vegetable oil, for shallow frying

For the tomato sauce:

  • 2 garlic cloves, thinly sliced
  • 200 ml (3/4 cup) tomato passata
  • Salt and black pepper, to taste
  • 2 tbsp fresh basil leaves, chopped

For assembly:

  • 2 slices of focaccia bread
  • 100 g (3.5 oz) mozzarella cheese, sliced
  • 2 tbsp crispy fried onions
  • 1 tbsp fresh chives, finely chopped
