Instructions

  1. Peel the potatoes and slice into small cubes.
  2. Heat a skillet over medium-low heat and add a small amount of oil. Add the potatoes with a pinch of salt and cook until cooked through but the cubes hold their shape. This will take around 6-7 minutes. TOP TIP – To test that the potato is ready, it should still be cube shaped but be easy to squeeze between your fingers.
  3. Once cooked, place the potatoes in a mixing bowl with an egg yolk and stir.
  4. Take a handful of the potato mixture and place it on parchment paper, fold over and use your hand or a rolling pin to lightly press the potato into shape.
  5. Heat a frying pan on high heat and add enough oil to cover the hash brown. Place in the oil and fry for 3-4 minutes on each side until cooked or until the hash browns are crispy and golden brown.
  6. Remove from the oil and place on kitchen towel and set aside. You can also place in the oven at low heat to keep them warm.
  7. Heat a skillet or frying pan over medium heat. Place the sausages and bacon (if enough room) in the skillet and cook, turning occasionally, until they are browned and cooked through, about 10-12 minutes (the bacon may cook more quickly). Remove from heat and set aside. Alternatively you can air fry your sausages and bacon for 10-12 minutes at 180°C (356°F).
  8. To fry the eggs heat a non-stick skillet over medium-low heat and add a small amount of oil.
  9. Crack the eggs into the skillet, one at a time, and cook them to your preference (sunny-side-up or over-easy).
  10. Season with a pinch of salt and pepper. Remove from heat when done and set aside.
  11. If frying your bread, place it in the pan you fried the eggs in making sure to mop up some of the oil. Cook on a medium-low heat for 2-3 minutes on each side or until brown.
