Instructions

  1. Slice potatoes into chips. (Tip: If you cut a small section from the bottom it gives your potatoe a flat surface to make cutting easier)
  2. Cover chips in vegetable oil and season with salt
  3. Place chips on a baking tray and cook in oven for 20-25 mins. If using an air fryer cook for 15 mins and check.
  4. Add the flour, salt, pepper and lager to a mixing bowl and stir well (the batter should fall from your spoon in one consistent stream, if you prefer a thicker batter add more flour to your preference)
  5. Cut your fish fillets into equal halves
  6. Cover your fish fillets in the batter
  7. Add your mushy peas to a sauce pan and cook on medium-low heat stirring regularly
  8. Add an inch of oil to your frying pan and heat on high to near smoking, you can check the heat of the oil by hovering your hand 6-8 inches above the pan
  9. Turn the heat down to medium-high and add your battered fillets into the oil
  10. Cook for 4-5 minutes on each side on a medium-high heat
  11. Once cooked, remove fillets from the pan and place on a plate covered with kitchen towel
  12. Assemble your sandwich, spreading the peas on the bread and layering with your fish fillets, chips and tartare suace as you’d like
