Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, pulse the Bombay Mix until it becomes a coarse crumb-like texture. Alternatively, place into a sandwich bag and use a rolling pin to crush. Transfer the mixture to a shallow dish.
  3. Set up a breading station by placing the all-purpose flour in one shallow dish, beaten eggs in another dish, and the Bombay Mix crumbs in a third dish.
  4. Season the chicken breasts with salt and pepper. Dip each chicken breast into the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, press the chicken breast into the Bombay Mix crumbs, ensuring it is coated evenly on both sides.
  5. Heat a bit of oil in a large oven-safe skillet over medium-high heat. Once hot, add the coated chicken breasts and cook for about 3 minutes per side until they turn golden brown.
  6. Transfer the skillet to the preheated oven and bake the chicken breasts for 15-20 minutes, or until they reach an internal temperature of 165°F (74°C).
  7. While the chicken is baking, prepare the Bombay Mix raita. In a bowl, combine the plain yogurt, grated cucumber, Bombay Mix, chopped cilantro, ground cumin, and salt. Mix well until all the ingredients are combined. Adjust the seasoning to taste.
  8. Once the chicken is cooked through, remove it from the oven and let it rest for a few minutes. Slice the chicken breasts into thin strips.
  9. To assemble the sandwich, spread a generous amount of mango chutney on one side of each sandwich roll or slice of bread. Layer lettuce leaves on top of the chutney. Place the sliced Bombay Mix crusted chicken on top of the lettuce.
  10. Spoon a dollop of Bombay Mix raita over the chicken and top with the other half of the sandwich roll or bread slice.
  11. Note: Feel free to adjust the amount of mango chutney, lettuce, and raita to suit your taste preferences.

  • 1 tbsp garlic, crushed
  • 1/2 teaspoon ground cumin
