Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking sheet with cooking spray. If using an air fryer, heat to 190°C.
  2. In a large bowl, mix together the grated potatoes, Parmesan cheese, coriander and spring onions. Season with salt and pepper.
  3. Using your hands, form the potato mixture into four small patties.
  4. Place into the fridge for 15-20 mins.
  5. In a large nonstick skillet, melt 1 tablespoon of butter over medium-high heat. Add the potato patties and cook until golden brown and crispy on both sides, about 5-6 minutes per side. Transfer the rostis to the prepared baking sheet and bake in the oven for 10-15 minutes, or until crispy and cooked through.
  6. In the same skillet, cook the bacon until crispy. Remove the bacon from the skillet and drain on paper towels. If using an air fryer you can do the bacon in there – cook at 190°C (375°F) for 10 mins.
  7. In the same skillet, fry the halloumi cheese until golden brown on both sides. Remove the cheese from the skillet and set aside.
  8. Crack the eggs into the skillet and cook to your desired level of doneness.
  9. Toast your bread (optional).
  10. To assemble the sandwich, start by placing a potato rosti on a slice of bread, you can add your favourite sauce to really make the sandwich pop. Top with the sliced bacon, the avocado, the fried halloumi, and the fried egg. Season with salt and pepper to taste.
