The Inspiration Behind the Brioche Cinnamon Dessert Sandwich

The inspiration for this dessert sandwich came from a desire to elevate the classic cinnamon roll with the luxurious texture of brioche bread. Cinnamon rolls are a perennial favorite, known for their gooey centers and sweet glaze. Brioche, with its buttery richness, adds an extra layer of decadence that takes this dessert to new heights.

By adding a creamy buttercream glaze and a touch of melted chocolate, we’ve created a dessert that’s both rich and satisfying. The cinnamon egg mix used to coat the sandwich before frying adds a golden, crispy exterior, providing the perfect contrast to the soft, sweet interior.

The Ingredients and Their Role

To create this delicious dessert sandwich, you’ll need the following ingredients:

For the Brioche Cinnamon Dessert Sandwich:

  • 6 large slices of brioche bread (about 1 cm thick)

For the Buttercream Glaze:

  • 120g (4 oz) cream cheese, softened
  • 60g (1/4 cup) butter, softened
  • 250g (2 cups) icing sugar
  • 1 teaspoon vanilla extract

For the Cinnamon Dusting:

  • 2 tablespoons ground cinnamon

For the Chocolate Layer:

  • 100g (3.5 oz) chocolate buttons, melted

For the Cinnamon Egg Mix:

  • 2 large eggs
  • 60ml (1/4 cup) milk
  • 1 teaspoon ground cinnamon

For Frying:

  • 2 tablespoons butter

Step-by-Step Preparation

1. Preparing the Buttercream Glaze

Start by beating together the softened cream cheese and butter until smooth and creamy. Gradually add the icing sugar and vanilla extract, continuing to beat until well combined and fluffy.

2. Flattening the Brioche Slices

Take the brioche bread slices and use a rolling pin to flatten each slice until they are about 0.5 cm thick. This makes the slices more pliable and easier to roll.

3. Spreading the Glaze and Cinnamon

Spread an equal amount of the buttercream glaze onto each flattened brioche slice, ensuring it’s evenly coated. Dust each glazed slice generously with ground cinnamon.

4. Rolling the Slices

Carefully roll each slice from one end to the other to create a tight spiral, similar to rolling up a cinnamon roll. Once all slices are rolled, stack them by gently pressing the rolls together, creating multiple layers within each roll.

5. Melting the Chocolate

Melt the chocolate buttons in the microwave in short bursts, stirring until smooth and fully melted. Spread a layer of melted chocolate on the top and bottom slice of each brioche roll.

6. Preparing the Cinnamon Egg Mix

In a shallow bowl, whisk together the eggs, milk, and ground cinnamon. Dip each chocolate-coated brioche roll into the cinnamon egg mix, ensuring both sides are well coated.

7. Frying the Sandwich

Heat a non-stick frying pan over medium heat and add the butter. Fry the dipped brioche rolls in the pan until golden brown on both sides, about 2-3 minutes per side. Remove from the pan and allow to cool slightly before serving.

Serving Suggestions

Serve these brioche cinnamon roll sandwiches warm, perhaps with a drizzle of extra glaze or a sprinkle of powdered sugar for added sweetness. They pair beautifully with a hot cup of coffee or a cold glass of milk, making them an ideal treat for breakfast or dessert. The rich, buttery brioche, combined with the creamy glaze and melted chocolate, creates a truly indulgent experience that’s perfect for any occasion.

Instructions

  1. Combine the butter and cream cheese in a bowl and mix with a fork initially. Once combined, sieve the icing sugar into the bowl and add the vanilla extract and whisk until the mixture lightens in colour. Place this aside.
  2. Using a rolling pin, flatten 1-3 slices of brioche bread. Scoop an equal amount of the glaze you just made onto each piece and dust with ground cinnamon. Roll up the first slice and (if doing more than one) roll the second slice around the first and the third slices around that. You should end up with a multi layered roll.
  3. Using a microwave safe bowl, put the Chocolate Buttons in the microwave and cook for 30 second intervals, stirring in between each. It should take around 60-90 seconds to melt the chocolate.
  4. Craack the eggs into a bowl and add 2 tsp of ground cinnamon. Place two slices of brioche bread in the mixture and cover evenly.
  5. Put some butter in a pan on medium-low heat and place the two pieces of egg-soaked brioche bread. Cook for 2-3 minutes on each side.
  6. Now it’s time to assemble your sandwihc!
