Instructions

  1. In a bowl, combine half of the curry powder, ground cumin, ground coriander and season with salt, and pepper.
  2. Add the chicken, lime juice and 1 cup of yoghurt to the spices and coat the chicken, adding more yoghurt or a little bit of white vinegar if your marinade is too dry.
  3. Cover and refrigerate the chicken for at least 30 minutes to let the flavours meld.
  4. In a large bowl, combine the shredded red cabbage and carrots.
  5. Squeeze the juice of 1 lime over the red cabbage and carrots and toss everything together until the coleslaw is well coated. Season with salt and pepper then set it aside.
  6. In a separate bowl, mix the remaining Greek yoghurt, honey, and chopped fresh mint leaves. Stir until well combined. Set it aside.
  7. For the chicken batter, mix the remaining dried spices into a bowl with 2 cups of flour and season with salt and pepper.
  8. After the chicken has marinaded, coat each piece in the flour then set aside.
  9. Heat the vegetable oil in a skillet over medium-high heat.
  10. Add the coated chicken thighs to the skillet and cook for about 3-4 minutes per side or until they are cooked through and have a nice, golden crust. The heat of the oil is important here, you don’t want it too hot as it will burn the batter without cooking the chicken.
  11. Remove the chicken from the skillet and let it rest for a few minutes. Then, slice it into thick strips.
  12. For the garlic butter, combine chopped garlic (puree’d will make it extra garlicy), 50g of butter and some of the chopped mint if you have any left. Spread it across your slices then toast in a pan on medium-low heat for 2-3 minutes on each side or until golden.
  13. Now it’s time to construct your sandwich! Start with some of the yoghurt, then layer some coleslaw, then the chicken, some more coleslaw and a final drizzle of the yoghurt on top. Or make it however you’d like!

  • 2-3 garlic cloves
