  1. Start by preparing the whiskey cream sauce. In a saucepan over medium heat, melt the butter and shallots to a frying pan and cook on low-medium heat until browned (10-15 mins).. Add the whiskey and let it simmer for a couple of minutes, allowing the alcohol to cook off and the sauce to reduce slightly.
  2. Add the mustard and beef stock to the pan and simmer for another 2-3 minutes.
  3. Stir in the heavy cream and continue to cook, stirring frequently, until the sauce thickens to your desired consistency. Season with salt and pepper to taste. Remove from heat and set aside.
  4. Preheat your grill or a skillet over medium-high heat. Brush the asparagus spears with olive oil and grill them for about 3-4 minutes, turning occasionally until they become tender and slightly charred. If you like heat, you can optionally add some chilli flakes towards the end of cooking. Remove from heat and set aside.
  5. Season the Aberdeen Angus steak cuts generously with salt and pepper on both sides.
  6. Heat a skillet or grill pan over high heat. Add a bit of olive oil to prevent sticking. Place the seasoned steak cuts onto the hot skillet or grill pan.
  7. Cook the steaks to your preferred level of doneness. For medium-rare, aim for about 3-4 minutes per side, depending on the thickness of the steaks. Adjust the cooking time to your liking (medium, medium-well, etc.).
  8. While the steaks are cooking, grill or toast the bread until it’s lightly golden brown.
  9. In a separate skillet, cook the streaky bacon until it becomes crispy. Alternatively you can air fry at 200°C (392°F) for 12-15 minutes. Place the cooked bacon on paper towels to drain excess grease.
  10. Once the steaks are cooked to your desired doneness, remove them from the heat and let them rest for a few minutes. Slice them thinly against the grain.
  11. To assemble the sandwiches, start by placing a generous portion of sliced steak on the bottom half of each slice. Then cover in the sauce.
  12. Add 2 slices of crispy bacon on top of the steak, followed by 4 grilled asparagus spears. Add as much sauce as you’d like between the layers.
