  1. Begin by placing each chicken breast between sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.
  2. Season the chicken breasts with a pinch of salt and pepper.
  3. Dip each chicken breast into the beaten eggs, ensuring it’s fully coated.
  4. Now, press the chicken into the crushed Doritos, coating it thoroughly with the crumbs. Press down firmly to make sure the crumbs adhere.
  5. In a large pan or skillet, heat vegetable oil to around 350°F (175°C). Carefully place the breaded chicken breasts in the hot oil and cook for 4-5 minutes on each side or until they are golden brown and cooked through. Remove the chicken from the oil and place them on a paper towel to remove excess oil.
  6. In a large bowl, combine the thinly sliced white cabbage, ranch dressing, lemon juice and vinegar.
  7. Season with salt and pepper to taste. Toss everything together until the cabbage is well coated with the dressing. Set the coleslaw aside.
  8. Cover each slice of bread with the chilli jam making sure to cover the entire slice.
  9. Next, press the bread slices into the crushed Doritos, ensuring a thorough coating of Dorito crumbs.
  10. In a clean pan or skillet, heat about 2 tbsp of vegetable oil over medium-high heat. Carefully place the bread slices in the hot oil and cook for about 30 second on each side, or until they turn crispy and golden brown. Remove the fried bread from the oil and let them drain on paper towels.

  • 2 eggs, beaten
  • Vegetable oil for frying
  • Sauce Shop Buffalo Hot Sauce
  • 2 cups of thinly sliced white cabbage
  • 1/2 cup of ranch dressing
  • 1 tablespoon of lemon juice
  • 2 tablespoon of parsley
  • 1 tablespoon of white vinegar
