The emphasis on letting quality ingredients shine through is something that resonated with my approach to sandwich-making. Instructions

Preparing the Bread:

  • Preheat a grill pan over medium-high heat.
  • Lightly brush both sides of the sourdough bread slices with olive oil.
  • Grill the bread slices until they are golden brown and have nice grill marks, about 2-3 minutes per side. Remove from heat and set aside.

Preparing the Tomatoes:

  • Thinly slice the variety of heirloom tomatoes.
  • Place the tomato slices in a bowl, drizzle with olive oil, and season with sea salt. Gently toss to combine and set aside.

Preparing the Rocket and Black Olive Salad:

  • In a large bowl, combine the fresh rocket and sliced black olives.
  • Drizzle with olive oil and fresh lemon juice, and season with sea salt. Toss well to ensure the salad is evenly dressed.

Assembling the Sandwich:

  • Spread a generous amount of Straciatella cheese on each slice of grilled sourdough bread.
  • Arrange the seasoned heirloom tomato slices on two of the bread slices over the cheese.
  • Add a portion of the rocket and black olive salad on top of the tomatoes.
  • Place the remaining slices of bread on top, cheese side down, to complete the sandwich.

Serving:

  • Serve immediately while the bread is still warm and the cheese is soft.
  • Enjoy your sandwich with a side of extra salad or some crispy chips.
