Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken on a baking sheet.
  3. Drizzle olive oil over the chicken, then sprinkle with dried thyme, dried rosemary, salt, and pepper.
  4. Roast in the preheated oven for about 20-25 minutes or until the chicken is cooked through and juices run clear.
  5. Allow the chicken to rest for a few minutes before slicing it into thin strips.
  6. For the cheese sauce, melt the butter in a pan on low heat and then stir in the flour and let cook for 1 min or so.
  7. Gradually add the milk, stirring constantly until a smooth sauce forms or all the milk has been added.
  8. Bring the mixture to a simmer and stir in the cheese. Cook until the cheese has melted and the sauce has thickened slightly, then season to taste.
  9. Toast your bread to your preferred toastiness, place the sliced mozzarella on one slice (we’d recommend you grill the mozzarella for added cheesiness and MAJOR cheese pulls), cover with the chicken and then DO NOT hold back on the cheese sauce. Enjoy!

  • 2 boneless, skinless chicken breasts or 4 chicken thighs (whatever’s your preference)
  • 1 tablespoon olive oil
  • 1 teaspoon dried (or fresh) thyme
  • 1 teaspoon dried (or fresh) rosemary
  • 25g butter
  • 1 tbsp plain flour
  • 150ml milk
  • 50g stilton cheese (you can use more if you’d like, jus don’t use so much that the sauce gets too thick!)
  • 250g mozzarella
