Instructions

  1. In a mixing bowl, combine the cream cheese, chopped spring onions, chives, lemon zest, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  2. For the Rocket and Sweet Piquanté Pepper Salad, in a separate bowl, combine the fresh rocket leaves and chopped sweet piquante peppers.
  3. Then add the lemon juice, olive oil and salt and pepper to taste. You can also add some of the brine from the peppers if you’d like an extra kick.
  4. Take two slices of bread and spread a generous amount of the cream cheese mixture on each slice.
  5. Arrange the smoked salmon slices on one slice of bread, creating an even layer.
  6. Top the salmon with a handful of the rocket salad, and then place the second slice of bread with the cream cheese spread facing downwards to form a sandwich.

  • 200g smoked salmon slices
  • 250g cream cheese
  • 2 spring onions, finely chopped
  • 1 tablespoon fresh or dried chives, finely chopped
  • Juice of 1 lemon
  • Handful of fresh rocket leaves
  • 1/2 cup sweet piquanté peppers, chopped
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup piquanté peppers
  • Salt and black pepper to taste
