Instructions

Prepare the Bolognese Sauce:

  • Heat olive oil in a medium saucepan over medium heat.
  • Add diced onions and cook until softened, about 5 minutes. Add minced garlic and cook until fragrant.
  • Add ground beef and season with salt, pepper, and ground beef seasoning. Cook until browned, breaking it up as it cooks.
  • Stir in Worcestershire sauce and cook for an additional 1-2 minutes.
  • Pour in the red wine and allow it to simmer for 2-3 minutes, letting the alcohol cook off.
  • Add wine stock cubes (if using), bay leaves, and tomato passata. Stir well.
  • Reduce heat to low, cover, and let the sauce simmer gently for about 1 hour, stirring occasionally.
  • In the last 10 minutes of simmering, add reserved pasta water to reach your desired consistency. Remove bay leaves and set aside.

Prepare the Garlic Bread:

  • Preheat the oven to 200°C (400°F).
  • Combine melted butter, garlic paste, and parsley in a small bowl.
  • Brush the garlic butter mixture generously onto each slice of bread.
  • Toast in the oven until golden and crisp, about 5-7 minutes. Set aside.

Assemble the Sandwich:

  • Layer cooked spaghetti onto the bottom slice of garlic bread.
  • Spoon a generous amount of bolognese over the spaghetti.
  • Add mozzarella cheese on top of the bolognese layer.
  • Place the sandwiches back in the oven for a few minutes to melt the mozzarella.
  • Sprinkle grated Parmesan over the top layer and place the second garlic bread slice on top.

For the Bolognese Sauce:

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 250g (8.8 oz) ground beef
  • Salt and pepper, to taste
  • 1 tsp ground beef seasoning (if available)
  • 1 tbsp Worcestershire sauce
  • 125 ml (½ cup) red wine
  • 2 wine stock cubes (optional, adjust salt if using)
  • 2 bay leaves
  • 400 ml (1⅔ cups) tomato passata
  • 100 ml (⅓ cup + 1 tbsp) pasta water from the spaghetti (reserve just before draining)

For the Garlic Bread:

  • 4 slices of rustic bread or ciabatta rolls, halved
  • 2 tbsp unsalted butter, melted
  • 2 garlic cloves, minced or mashed into a paste
  • 1 tbsp chopped fresh parsley

Additional Ingredients:

  • 100g (3.5 oz) spaghetti, cooked al dente
  • 100g (3.5 oz) mozzarella cheese, sliced or shredded
  • 30g (1 oz) grated Parmesan cheese
