Instructions

  1. Season the chicken breasts with salt and black pepper. Then butterfly the breasts to make them thinner (this will aid the cooking speed)
  2. Place the flour in a shallow dish.
  3. In another shallow dish, whisk together the eggs.
  4. In a third shallow dish, combine the breadcrumbs and Parmesan cheese.
  5. Dredge the chicken breasts in the flour, shaking off any excess.
  6. Dip the chicken in the egg mixture, then coat with the breadcrumb mixture. Repeat until you’ve covered all of your chicken.
  7. Heat the vegetable oil in a large skillet over medium-high heat.
  8. Add the chicken breasts to the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
  9. Transfer the chicken breasts to a baking sheet lined with parchment paper.
  10. Now it’s time to make the ragu. In a medium saucepan, heat the olive oil over medium heat.
  11. Add the onion and garlic and cook until soft and translucent, about 5 minutes.
  12. Add the crushed tomatoes and bring to a simmer.
  13. Season with salt and black pepper to taste.
  14. Simmer the tomato sauce for about 10 minutes, or until thickened. We prefer a thicker ragu as it makes the bread less soggy.
  15. Remove the tomato sauce from the heat and stir in the chopped fresh basil.
  16. To assemble the sandwiches, spread some of the basil and tomato ragu on the bottom half of each slice of toasted bread.
  17. Top the ragu with a few spinach leaves.
  18. Place a chicken breast on top of the spinach. You can either leave it whole or cut it into slices before placing in your sandwich.
  19. Top the chicken with your slices of fresh mozzarella cheese.
  20. Place the top half of the bread on top of the cheese.
  21. Serve the chicken Parmesan sandwiches immediately, garnished with additional fresh basil leaves, if desired.

  • 1-2 large boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups vegetable oil
  • 1 ball (or 4-6 slices) of mozzarella
  • 1 can (14 oz) tomatoes (can use cherry tomatoes as an alternative)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 1 tablespoon olive oil
  • 1 cup fresh spinach leaves
  • Salt and black pepper to taste
