What is a Surf n Turf Sandwich?

Surf n turf traditionally combines seafood and red meat, offering the best of both land and sea. In this sandwich, I’ve paired tender ribeye steak with crispy shrimp to create an indulgent and satisfying meal. It’s a play on the classic concept but reimagined as a handheld feast.

How to Serve and Pair Your Surf n Turf Sandwich

This sandwich is a meal on its own, but if you’re looking for sides, consider these options:

    • Fries or Chips: Crispy, golden fries are always a hit.

    • Simple Salad: A light, fresh side salad can balance the richness of the sandwich.

    • Coleslaw: A tangy slaw adds crunch and cuts through the richness of the steak and shrimp.

For drinks, a cold beer or sparkling water with lime pairs beautifully with the bold flavours.

From the perfectly cooked steak to the crispy shrimp and the homemade sauce, every element is designed to deliver maximum flavour. Cooking Tips

    • Sweet Pickled Jalapeños: If you can’t find candied jalapeños, add a touch of honey to regular pickled jalapeños for a sweet-and-tangy substitute.

    • Shrimp Batter: Ensure your oil is hot enough to prevent the shrimp from becoming soggy.

    • Bread Options: Use a soft roll or a lightly toasted ciabatta for a balance of texture and flavour.

This Surf and Turf Sandwich combines savoury, spicy, and tangy notes with a satisfying crunch, delivering a meal that’s perfect for indulgent lunches or dinners.

FAQ: Your Surf n Turf Questions Answered

What are good substitutes for pickled jalapeños?

If you can’t source homemade pickled jalapeños like the ones my godmother makes, candied jalapeños are a fantastic alternative. Their sweet and spicy kick pairs beautifully with the creamy Boursin and roasted red pepper.

What kind of bread works best for this sandwich?

A crusty roll or toasted ciabatta is ideal. The bread needs to be sturdy enough to hold the fillings without becoming soggy.

What is surf n turf sauce?

In this sandwich, the sauce is a blend of roasted red pepper, Boursin, pickled jalapeños, and parsley, simmered until thick and luscious. It’s the flavour-packed glue that ties everything together.

How do you make the shrimp crispy?

The key is double-dipping the shrimp in a spiced flour mixture and frying it in hot oil. This method ensures a golden, crunchy coating that doesn’t fall off.

What is the saying “surf and turf”?

The saying “surf and turf” refers to a meal or dish that combines seafood (surf) and red meat (turf), often showcasing luxury ingredients like lobster and steak. It symbolises the best of both worlds, combining flavours from the sea and the land.

What does “for surf and turf” mean?

When someone says they’re going “for surf and turf,” they typically mean they’re opting for a meal that includes both seafood and meat. It’s a popular choice for those who want a bit of variety or an indulgent dining experience.

What does “surf meets the turf” mean?

The phrase “surf meets the turf” describes the harmonious pairing of seafood and meat in a single dish. It emphasises the fusion of flavours and textures, showcasing how well these two contrasting elements can work together.

What is surf and turf in the UK?

In the UK, surf and turf often includes local favourites like prawns or scallops paired with steak. While the concept originated in North America, it has become a versatile and popular dining option here, with variations ranging from gourmet restaurant offerings to pub classics.

In this recipe, my surf n turf sandwich brings the concept to life with a British twist, featuring ribeye steak and crispy shrimp in a bold and indulgent combination.

Instructions

Prepare the Sauce:

    • Blend the roasted red pepper, Boursin cheese, sweet pickled jalapeños, and parsley until smooth.

    • Transfer the mixture to a pan and simmer over medium heat, stirring occasionally, until thickened. The sauce is ready when a spoon dragged across the pan reveals the bottom.

Make the Crispy Shallots:

    • Toss the sliced shallots in flour and salt until evenly coated.

    • Heat oil in a deep pan to 180°C (350°F).

    • Fry the shallots in batches until golden brown and crispy. Drain on kitchen paper and set aside.

Prepare the Shrimp:

    • Combine the flour, cornflour, cayenne, smoked paprika, garlic powder, salt, and pepper in a bowl.

    • Coat the shrimp in the flour mixture, dip into the whisked egg, and coat in the flour mixture again.

    • Heat oil in a pan to 180°C (350°F) and fry the shrimp until golden and crispy. Drain on kitchen paper.

Cook the Ribeye Steak:

    • Season the steak generously with salt and pepper.

    • Heat a pan over high heat until smoking hot. Add the steak and sear for 2 minutes per side.

    • Add butter and garlic, basting the steak with the melted butter for 1 minute.

    • Rest the steak for 5 minutes before slicing thickly.

Make the Rocket Salad:

    • Toss the rocket with a pinch of salt and fresh lemon juice.

Assemble the Sandwich:

    • Spread a generous layer of the thickened roasted red pepper and Boursin sauce on both sides of the sandwich rolls.

    • Layer slices of ribeye steak, crispy shrimp, rocket salad, and crispy shallots.
