    • Finally, press the chicken into the panko breadcrumbs, making sure it’s fully covered.
    • Heat vegetable oil in a pan over medium heat. Once hot, fry the chicken strips until golden brown and crispy on both sides, about 3-4 minutes per side. Drain on paper towels and set aside.

Making the Macaroni and Cheese

    • Boil the macaroni in salted water according to the package instructions until al dente. Drain, reserving some pasta water.

For the Macaroni and Cheese:

    • 150g (5.3 oz) macaroni pasta
    • 100g (3.5 oz) cream cheese
    • 100g (3.5 oz) mozzarella cheese, shredded100g (3.5 oz) red Leicester cheese, shredded
    • Salt and pepper, to taste
    • 1 tbsp fresh parsley, chopped
    • Reserved pasta water (as needed)

For the Sandwich:

    • 4 slices of bread (your choice, but something sturdy like sourdough or ciabatta works well)
    • 2 tbsp sriracha sauce (store-bought)
