Instructions

  1. Preheat a grill or skillet over medium-high heat.
  2. Season the lamb fillet steaks with salt and pepper.
  3. Drizzle olive oil over the steaks and rub it in to coat.
  4. Grill the steaks for about 4-5 minutes on each side or until cooked to your desired doneness.
  5. Remove from heat and let them rest for a few minutes before slicing.
  6. In a large skillet, melt the butter over medium heat.
  7. Add the sliced onions and cook, stirring occasionally, until they start to caramelise and turn golden brown.
  8. Pour in half of the Guinness stout and let it simmer until the liquid has reduced and the onions are dark and caramelised.
  9. Stir in half of the Worcestershire sauce, half of the English mustard, salt, and pepper. Remove from heat and set aside.
  10. Set aside a handful of the cheddar. Mix the rest with the egg and the rest of the Guinness, Worcestershire sauce, mustard and cayenne pepper.
  11. Pre-heat the grill to high.
  12. Toast your bread lightly then spread the mixture on top then sprinkle over the reserved cheese.
  13. Grill for 3-4 minutes or until the cheese is melted and golden.
  14. Assemble your sandwich, serve immediately and enjoy!
