Instructions

Prepare the Whipped Brie:

  • In a mixing bowl, whip half of the Brie cheese until it’s creamy and smooth. Season with salt and pepper to taste.

Assemble the Sandwiches:

  • Take two slices of bread and spread a generous layer of whipped Brie on each slice.
  • On one slice, place three slices of crispy bacon and spread two tablespoons of cranberry sauce evenly over the bacon.
  • Place the other slice of bread with whipped Brie on top, creating a whipped Brie, bacon, and cranberry sandwich.

Grill the Sandwiches:

  • Heat a skillet or grill pan over medium heat and melt a knob of butter.

  • Carefully place the assembled sandwich in the skillet and grill on both sides until golden brown and the Brie cheese is melted, about 2-3 minutes per side.

Prepare the Surprise Inside Sandwiches:

  • While the first sandwich is grilling, assemble another sandwich using the remaining Brie cheese, bacon, and cranberry sauce in the same manner as before.
  • Once assembled, grill this second sandwich until golden brown and the Brie cheese is melted, about 2-3 minutes per side as well.

Combine the Sandwiches:

  • Once both sandwiches are grilled, carefully place the second sandwich inside the first sandwich, creating a surprise inside.

Serve and Enjoy:

  • Cut the sandwich in half to reveal the surprise inside, and serve immediately while hot.

Practical Tip:

To ensure even melting of the Brie cheese, you can cover the skillet with a lid while grilling the sandwiches. Additionally, you can add a sprinkle of thyme or rosemary for extra flavour.
