Instructions

Prepare the Hash Browns

    • Preheat your air fryer to 200°C (390°F) for 5 minutes.

    • Place the hash browns in the air fryer basket in a single layer and cook for 10–12 minutes, flipping halfway through, until golden and crispy.

Cook the Bacon

    • Heat a large frying pan over medium heat. Add the streaky bacon and cook until it reaches your desired crispiness. For crispy bacon, cook for 4–6 minutes per side, flipping as needed.

    • Once cooked, pour 2 tbsp of maple syrup over the bacon while it’s still in the pan, allowing the syrup to coat the bacon evenly. Remove and set aside on a plate.

Cook the Sausages

    • Using the same pan, add the sausages to the residual maple-bacon fat. Cook over medium heat, turning frequently, for 8–10 minutes or until golden and cooked through.

Prepare the Sauce

    • In a small bowl, mix together the mayonnaise, wholegrain mustard, lemon juice, salt, and pepper. Adjust seasoning to taste.

Assemble the Sub

    • Slice the sub rolls lengthwise, leaving one side attached to create a hinge. Add the American cheese and melt under a grill

    • Spread a generous amount of the sauce onto both sides of the roll.

    • Layer in the cooked hash browns, maple-glazed bacon, sausages and fried eggs (optional).

    • Serve immediately and enjoy the ultimate breakfast sub!

  • 4 sausages (your favourite breakfast variety)
  • 2 tbsp maple syrup
  • 4 slices American cheese

  • 1 tbsp butter or oil (for frying eggs)

  • 3 tbsp mayonnaise
  • 1 tbsp wholegrain mustard (or Dijon mustard)
  • 1 tsp lemon juice
