Instructions

  1. Season your chicken and place in the oven or air fryer at 180°C (356°F) until cooked through.
  2. Whilst your chicken is cooking, in a medium-sized bowl, whisk together the mayonnaise, garam masala, cinnamon, honey, salt and pepper.
  3. Slice your cucumber lengthways, or diagonally. Then slice your tomato.
  4. Add the cooked chicken to the bowl. Pull the meat apart using two forks and then mix well, ensuring the chicken is coated in the mixture.
  5. Lightly toast your bread then spread with the mango chutney.
  6. Layer your sandwich by starting with the lettuce.
  7. Then add a generous amount of coronation chicken mix.
  8. Layer your sliced cucumber on top of the chicken. Followed by your sliced tomato.
  9. Top the sandwich with your other slice of bread and serve immediately.
  10. Enjoy your sandwich and have a great time if you’re celebrating the Coronation of King Charles!

  • 1/4 cup almonds (optional)
  • 1 Tbsp mango chutney

  • Salt and pepper, to taste
  • 1/4 cucumber, sliced
  • 1 beef tomato, sliced
  • 1/4 cup fresh coriander (cilantro), chopped
  • 2 tbsp British honey
