    • 1 small bunch of fresh basil (about 10 g or 1/3 cup, loosely packed)

    • 2 garlic cloves

    • Juice of 1/2 lemon

    • 1 tbsp tomato paste (15 g)

    • 1/2 tsp salt

    • 1/4 tsp black pepper

    • 120 ml (1/2 cup) chicken stock

    • 120 ml (1/2 cup) double cream (heavy cream)

For the Pickled Red Onions:

    • 1 small red onion, thinly sliced

    • 125 ml (1/2 cup) boiling water

    • 125 ml (1/2 cup) red wine vinegar

    • 1/2 tsp salt

For the Crispy Shallots:

    • 2 medium shallots, thinly sliced

    • Vegetable oil for frying

For the Salad:

    • 2 handfuls of rocket (arugula)

    • Juice of 1/2 lemon

    • 1 tsp olive oil (5 ml)
